Cardamom Pistachio "Kulfi" Pops

Kulfi is an Indian frozen milk based dessert. It's sweet and has great flavor. It is sweetened by condensed milk and is infused with some sort of tea. You can use chai but for this one we will be using Earl Grey. Once you make the cream mixture you can either put it on a popsicle mold or on a cup so it will be like a mini kulfi. This is perfect for those warm sunny days. Got this recipe from Aarti Sequeira from Food network. I really enjoy watching her. She always has an Indian twist to everything she makes!

Here's what you need:

1 3/4 cups of half and half
1 can of condensed milk (about a cup)
1 12 oz. can of evaporated milk
4 earl grey tea bags
handful of chopped Pistachios
1/2 teaspoon of ground cardamom

 1. Heat a medium sauce pan and pour in your evaporated milk. Bring to a simmer. Once it starts bubbling add the teabags. It helps if you cut the thread of your teabags. Add the ground cardamom and mix well. Turn off heat, cover the pan and let it steep for 30 minutes.

 2. Discard the teabags and add the half and half, condensed milk and chopped pistachios.



3. Pour the mixture to your ice pop molds or pour into your small bowl. If you are using a small bowl or ramekin make sure to put a plastic wrap on top of it to prevent freezer burns. Freeze overnight and enjoy! :) It is very simple yet an exotic and creamy treat!
